Char Magaz is a mix of four different seeds that are almonds, cantaloupe, water melon and pumpkin seeds. It’s English name is Dried Melon Seeds. Charmagaz is believed to develop brain and rejuvenation. It is mostly used to make different types of drinks such as Thandai and Thadal. Almonds and pumpkin contain high amount of fatty acids which helps build and maintain the parts of brain.

Coriander Pwd | 5gm |
Garam Masala Whole | 5gm |
Green Chili | 5gm |
Garam Masala Pwd | 10gm |
Salt | As Req |
Ghee | 30gm |
Curd | 100ml |
Kewra Water | A few drops |
Preparation
- Peel and cut the onion in half. Prepare ginger garlic paste. Chop the green chilies.
- Marinate the chicken with salt.
- Boil the onion and prepare paste. Soak the cashew and charmagaj in warm water till they soften. Prepare paste of cashew and charmagaj.
- Heat ghee in a pan and add a tempering of whole garam masala. Add the chopped green chili and ginger garlic paste and cook till the raw flavor goes.
- Now add the boiled onion paste and cook. Ensure that the onion does not become brown.
- Add the coriander powder, some garam masala powder and cook till fat comes on top.
- Add the cashew and charmagaj paste and cook some more.
- When the gravy is ready, add the chicken and cook till they are done.
- Check the seasoning. Finish the gravy with garam masala powder, beaten curd and afew drops of kewra water.
